In Settings there's a field "Coverart Max Width" (similar). Setting that to 600 will be OK for most displays. Notice that this can't be a "max display width" setting, because the height is involved as well, plus Coverart can take more shapes than the normal CD cover (think DVD-A) *plus* it is you who decides to also show the Back of the album.
